Best veggie salad

I don’t eat meat, so it is challenging to say the least to find a wholesome fulfilling meal that satisfies ones cravings.

I discovered a salad, on the aubon pain menu, which was pretty good; if I add additional ingredients and change the dressing, but then the salad costs $10 -$12  and that is just too expensive to purchase on a daily basis

plus  adding toppings for 50 cents each, and they only give you a little bit ( totally not worth it)

So here is my recipe for

My favorite veggie salad:

Chopped romaine lettuce / or spring mix

Shredded carrots

Sliced cucumbers 

Sliced bell peppers

Chick peas

Black beans

Corn ( canned or frozen , rinsed properly)

Calamata olives (cut in two)

Asparagus (oven roasted with olive oil and cut into 1/2 to 1 inch pieces)

Feta or blue cheese



Thinly Sliced red onions

Grannie smith Apple (cut into small pieces)

Salad dressing of choice

Additionally avocado and or dried cranberries can be added

Combine all ingredients and enjoy

Remember you can combine any or all variations of the ingredients

I found that it’s best to have all ingredients prepped and stored in refrigerator

And this salad is great for meat eaters and non-meat eaters alike

My kids and husband loved it!!!!
